“Smörgåstårta” – Sandwich Cake

Swedish Smörgåstårta is a savory cake. It’s delicious. The Sandwich cake or Smörgåstårta is a speciality of Sweden. The cake is served at parties. Instead of cream and sugary decorations it can be decorated with raddishes, eggs, dill, salmon, prawns, ham, tomatoes, cucumbers to name a few toppings. One piece is a whole meal. The sky is the limit!

Ingredients and instructions

Bread, slices of toast, crust cut off or round or square thinly sliced wheatbread the size you want your cake to be. You want to build three layers with the bread. And you make it according to how many people is going to eat. The one I made here is a small one that I made for myself. So I used only 12 slices of toastbread to make three layers. You can use any kind of bread you like or bake it especially.

Fillings for three layers

Filling 1 with Liverpaté

  • Cucumber pickled and chopped
  • Anchovis fillets chopped
  • Liver paté
  • Red onion chopped
  • Salt
  • Pepper
  • Mayonnaise
  • Creme fraiche

Filling 2 with meat and beatroot

  • Some kind of meat like chicken, ham or sausage, chopped or a mix like I did
  • Pickled Beetroos chopped
  • Cheese shredded
  • Salt
  • Pepper
  • Mayonnaise
  • Creme fraiche
  • Mustard

Filling 3 with shrimp and hardboiled eggs:

  • Hardboiled eggs shredded
  • Shrimps
  • Caviar
  • Red onion chopped
  • Mayonnaise
  • Creme Fraiche
  • Mustard
  • Salt
  • Pepper

Instructions for making the fillings:

Mix the ingredients for each filling in separate bowls. When the taste is to your liking set aside.

I don´t give measurements or amounts here because it is really up to you to decide the size of your cake. Also feel free to make the fillings you like. These three are traditionally used in Sweden. But only your imagination and tastebuds are the limit.

Prepare the cake

Measure up your cake by building it with bread without putting any filling in. Decide how big you want it and how many layers and cut the bread and puzzle together. The sides should be straight so build it well so it doesn´t fall when you start to mount the cake with the filling.

When you have built the cake without filling start to make your first layer.

Lay out your bread the size and shape of your first layer

Add the first filling on top of the whole layer and spread it evenly.

Place another layer with bread on top.

Add the second filling and spread it out over the whole layer evenly.

Place the third layer of bread on top.

Add the third filling and spread it out over the whole layer evenly.

Add a fourth layer of bread on top.

Trim the sides of the whole cake so it is straight on each side.

For the best taste wrap the cake in plasticwrap and place in fridge overnight. This will allow the fillings to blend with the bread.

Decorating the Smörgåstårta

For decoration you can use your imagination and creativity. This is the ingredients I used this time.

  • Creem Cheese
  • Creme fraiche
  • Salad leaves
  • Cucumber fresh
  • Bell peppers fresh
  • Hardboiled eggs sliced
  • Cured or smoked Salmon thin slices
  • Sliced cheese
  • Large red tomatoe sliced
  • Cherry tomatoes halved
  • Springonion chopped
  • Lemon or Lime thin slices

Decoration time

Place the Salad leaves on your plate that you want to serve your cake on.

Line up your prepped ingredients for your decor.

Take out the cake from the fridge and remove the plastic wrap.

Place the cake on top of the salad leaves.

Mix cream cheese and creme fraiche and cover the whole cake with a thin layer. Use a spatula or knife to make it even all around.

Now you start to decorate with your ingredients. Make the shapes and designs you like.
