Cauliflower Pizza

Ideal for anyone who wants to eat less carbohydrates, is gluten intolerant or just want to make a really yummy pizza with full-bodied taste. What you top the cauliflower pizza with, you choose yourself.

Ingredients:
  • Pizzacrust
  • 200 g cauliflower
  • 1/2 dl grated parmesan cheese
  • 1/2 cup grated mozzarella
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon chili flakes
  • 2 tablespoons almond flour
  • 1/2 teaspoon salt
  • 1 egg

Topping

  • 1 dl tomato sauce
  • ½ chopped or sliced red onion
  • 1 mozzarella (125 g) torn or shredded
  • Slices of air-dried ham
  • Chopped sausage
  • Spinach leaves
  • Spring onion chopped

Instructions:

Set the oven to 250 ° C.

Crust: Mix raw cauliflower into a fine rice in a food processor. Place in a bowl and heat in the microwave for 4 minutes on full power. Let cool. Squeeze out the liquid.

Mix the cauliflower rice with parmesan, mozzarella, oregano, chili flakes, almond flour, salt and eggs to a dough.

Spread / flatten the dough into 2 pizzas (for 2 servings) on a baking sheet lined with parchment paper.

Bake in the middle of the oven for 8-10 minutes until the bottoms are golden and crispy. Remove and allow to cool slightly.

Topping: Add any pizza topping you prefer and have. I used what I had this particular day, tomato sauce, cheese, onion, sausage, ham, spring onion, spinach.

Bake for another 5 minutes.

For serving: Feel free to top the pizza with some greens.
