Meatloaf with Tomato Sauce

Looking through my mothers recipes I found one I really wanted to try to make. Meatloaf with tomatoesauce. I have had meatloaf often through the years, but actually never with tomatoe sauce, only with gravy. So I made up my mind to try this recipe. This was on the menu one October day in 1957. The main dish was Meatloaf with Tomatoe Sauce, sidedish of steamed cabbage and carrots, boiled potatoes. There was also Tapioca Pudding with Red Berry sauce. The menu was for 319 people and the cost per person was 1, 42 NOK. ( About 15 cents). Today it would be about 15 NOK. It is a lot of food for the money.

My mothers original recipe for 319 persons

Ingredients:

  • 35 kg meat (minced meat)
  • 1 kg of salt
  • 2 ½ kg potato flour
  • 2 tbsp nutmeg
  • 2 tbsp pepper
  • 30 l milk
  • 1 kg lard
  • 12 kg cranberries
  • 60 kg of potatoes

Steamed vegetables

20 kg carrot

20 kg of cabbage

Tomato Sauce

  • 30 l broth
  • 1, 8 kg margarine
  • 1, 8 kg flour
  • 5 liters cream
  • 3 kg tomato puree
  • Salt
  • Sugar

I have recreated the recipe except the dessert here and adjusted the ingredients to a smaller crowd. (About 4-6 portions.)

Meatloaf with Tomato Sauce

Ingredients:

  • 658 g meat (minced meat)
  • 18 g salt
  • 50 g potato flour
  • 1/4 tsp nutmeg
  • 1/4 tsp pepper
  • 6 dl milk
  • 18 g lard

Boiled Potatoes

1 kg potatoes

Steamed vegetables

  • 376 g carrot
  • 376 g of cabbage

Tomato Sauce

  • 9 dl broth
  • 34 g margarine
  • 34 g flour
  • 1 dl cream
  • 56 g tomato puree
  • Salt
  • Pepper
  • Sugar

Serve with Cranberry Jam

Instructions:

Meatloaf

Mince the meat in a foodprocessor

Add the rest of the ingredients and mix well.

Prepare an oven pan with greasing and pour in the meatloaf mix.

Fill only ¾ full.

Place a large oven pan in the oven.

Fill water in the larger oven pan.

Heat the oven to 180 Celsius Degrees.

Place your meatloaf pan in the large pan in the oven and bake for 1 hour.

Vegetables

Prepare the vegetables and steam the cabbage and carrots while boiling the potatoes.

Tomatoe sauce

In a saucepan melt the butter and whisk in the flour.

Add the broth a little at the time while whisking to avoid lumps.

Whisk until lumpfri.

Let it come to a boil and turn down the heat.

Add tomatoepuré and let it simmer for some minutes.

Add salt and pepper and sugar to your taste.

To serve

Place the meatloaf on a tray and pour some of the tomatoe sauce over and decorate with some parsley.

Serve cabbage, carrots, potatoes and sauce on the side.

If you have Cranberry Jam serve that to the Meatloaf!

I have to say I loved this recipe with tomatoe sauce!
