This week Stockholm Pride is celebrated, however only digitally due to Covid-19. Saturday is always the Day for the Pride Parade through Stockholm. I am a proud parent of my daughter Frida who is gay. We usually go into the city to watch the parade. It is such a happy celebration full of love and joy. Frida is not here this summer and I miss her but still want to celebrate this day and her. So I have made a special homemade icecream, prideicecream which of course I wish I could share with her. Now I share it with you all.
This basic recipe for ice cream is easy to make, and it can be flavored with your favorite flavors.
Ingredients:
- 1 vanilla bean
- 8 egg yolks
- 150 g sugar
- 5 dl Cream
Directions:
1 Split vanilla bean in half lengthwise and scrape out the seeds.
2 Beat egg yolks and sugar until fluffy and add the vanilla seeds. Whip the whipped cream stiff and mix in the egg mixture. Pour the ice cream into a suitable mold and put the mold in the freezer.
3 Stir in the icecream occasionally during freezing so that ice crystals do not form. Serve the vanilla ice cream naturally or add different flavors by adding berries, chocolate or something else good.
Tips:
I wanted to make rainbow ice cream so I divided the icecreammixture into parts and colored with food coloring. Then I placed the colors according to the colors of the pride flag in the mold I wanted to freeze the icecream in.
Other flavoring could be pieces of chocolate, fresh fruit and berries. It is only the imagination that sets the limits here!
Do not discard the egg whites, they can be used for meringue or a white omelette, for example.
