Norwegian “Kokoskake”

This Norwegian Coconut Cake is so delicious! It is more candy than cake and just melts in your mouth. It is also so easy and quick to make. I think this is the only quick and easy cake my mother used to make and it was almost always a part of her party tables.

Ingredients:

  • 4 eggwhites
  • 2 cups of sugar
  • 2 cups of dried shredded coconut flakes
  • 1/2 bar of chocolate

Decoration:

  • 5 dl heavy cream for topping and decoration
  • Chocolate for decoration

Instructions:

Whisk eggwhites and sugar white and stiff.

Stir the dried coconut flakes carefully in as well as shredded chocolate.

Fill in a round baking pan.

Bake in oven for 1 hour at 150 Celsius Degrees.

To serve top with whipped cream and decorate with shredded chocolate.

This meringue and coconut cake is a variation of the Islandic Party Cake called Islandskake. (The only difference is that in the Islandic Cake there is an addition of vanilla custard as a layer on the cake before topping with the whipped cream and shredded chocolate. In the Islandic cake there is often an addition of prunes in the filling.
