Lapskaus – Norwegian Comfort Food
Growing up in Norway we always made this from leftovers. It could be leftovers from sunday dinner on mondays or leftovers from many dinners during the week. So it did not always have the same ingredients. But it would always be a creamy, comforting stew consisting of potatoes, vegetables, some kind of meet, sausage or whatever leftovers. And it would be in a sauce, maybe also leftover.
Beauf Bourguignon
One of the dishes featured in the movie Julie and Julia is Boeuf Bourguignon. It gets almost gourmet status after, but this is actually classic home cooking from France. A really tasty and juicy stew. The stew should simmer for a long time on the stove or in the oven until the meat falls apart.
Mexican Champurrado
Champurrado is a traditional Mexican chocolate based atole that is comfort in a cup. Atoles such as champurrado are thickened with masa harina (corn flour) and flavored with spices, fruits or chocolate.
Mexican Conchas
Conchas are a soft and sweet Mexican bread with a topping that resembles the surface of a seashell. This is where the Concha gets its name, since “Concha” means “shell” in Spanish.
Swedish Tunnbrödsrulle
Swedish Flatbread Rolls (Flatbread Wraps) with filling is atraditional fast food meal. The filling usually consists of sausage, mashed potatoes, some form of cold salad such as cucumber, mayonnaise or shrimp salad and often also with roasted onions. As a rule, ketchup and mustard are included.
Three way Mexican Casserole
This casserole is healthy with lots of vegetables, lentils and beans and Mexican spicing that will suit every Taco and Chili Lover. I used ground beef and chorizo sausage in mine. It could be made totally vegetarian and taste great. The great thing with casserole is you decide what you put in.
Mejadra and Chicken Shawarma
Mejadra is a Middle Eastern Comfort Food. Mejadra is a one pot dish complete with Middle Eastern flavours but what really makes the dish are all the fried onions piled on top of the rice and lentils. I served it with Chicken Indian Shawmara.
Traditional Norwegian Fishcakes
Norwegian Fishcakes is a traditional dish of Norway and one I grew up with. Fresh fish was part of everyday life and fish was on the menu 3-4 days a week. A special treat was to get moms fishcakes. And here I have recreated those.
Vegan Sloppy Joe
Sloppy Joe is an American, simple sandwich originally consisting of ground beef, onions, seasonings, and tomato sauce or ketchup on a hamburger bun. The sandwich probably started as a variation of the “loose meat” sandwiches that didn’t contain tomato sauce. In this recipe I make it vegan, without the beef but just as tasteful.
