Protein Rich Bowl

This is a really fast and easy Rich Protein Bowl. It is made with few ingredients. The great thing with Bowls is you can use whatever you have. It is a great way to use small leftovers. If you want it totally vegetarian skip the chicken and add for instance roasted, cubed sweet potatoes instead. This is what I had this particular day.

Ingredients:

Bowl:

  • 1 cup sweet peas
  • 1 cup beans
  • 1 cup cooked rice or quinoa or bulgur
  • 200 grams chickenfilés
  • 4 dl chickpeas cooked
  • 1 dl sour cream
  • 1 bag fresh spinach leaves (about 3 handfulls)

Instructions:

Roast the chickpeas

Set the oven to 200 degrees Celsius

Rinse the chickpeas with cold water and pour them on a sheet of parchment paper.

Drizzle the oil over the chickpeas and sprinkle over paprika powder or chili powder.

Roast in the oven for approx. 20 minutes.

Roast the potatoes:

While the chickpeas are in the oven, prepare the other ingredients.

Chicken:

Season the chicken with salt and pepper. Heat a frying pan with oil and brown the chicken on medium heat for about 2 min on each side until they have a golden brown color.

Place the chicken in a pan in the oven and let them cook for about 15 min.

Cut the filés into thin slices.

Serving:

Plate the rice or bulgur or quinoa first in the bowl, add the roasted chickpeas, peas, chicken and other ingredients in the bowl.

Top with pickles if you have. In a bowl you can really add anything of your liking and what makes it pretty as well.

Herb sauce

If you want to serve with a sauce you can mix Creme Fraiche with thyme (dried), basil (dried), garlic pepper, black pepper and salt. Top with a little chopped spinach.
