I like to make my meals pretty even if simple. I like to challenge myself with what is in my refrigerator. This is a creation of leftovers and simple ingredients. It was my supper but could have been a lunch or brunch as well.
This is a really fast and easy Rich Protein Bowl. It is made with few ingredients. The great thing with Bowls is you can use whatever you have.
For me mealprepping is more than making ready meals. It is also prepping ingredients and in the most economical way possible.

Coconut Cake made from leftover Coconut Chutney I made the other day. It turned out so moist and good.
I had a zucchini, a carrot, some peppers, onion, tomatoes and bell peppers that I needed to use before they would get bad. I didn’t feel like cooking a dinner but baking. So I decided to make some filled pasties. I schredded the vegetables and put them in my pastydough as well as in the filling made from minced meat. It turned out great! The pasties became so soft and moist due to the zucchini and also yoghurt in it.
You don’t need a vegetable garden or a fancy party as an exuse to make your own pickles. Neither do you have to preseve food for the whole winter. I use to make pickles often to not waste small vegetables I have in the refrigerator. It could be a cucumber I worry I will not use before it will go soft, a carrot or two, a small piece of cabbage, some apple or pear, anything really. It is fast and easy!
There is nothing better a warm day than a slice of watermelon. I love to take it with me to the beach or on a picknick.
You can freeze watermelon. Cut small cubes and freeze and use them as ice-cubes in a drink or just a glass of water. Cut them in icecreamshapes and stick a Popsicle stick in each. Freeze and you have a watermelon icecream or cold drinks to look forward to!
When Cooking with chickpeas from a can, what do you do with the liquid if you don’t add it to your dish? Do you throw it away? Did you know the liquid called Aquafaba can be used instead of eggwhites? I made meringues from Aquafaba the other day. Had some fun with piping multiple colors as well.
Today I have made Applesauce from fallen apples. Last night there was a heavy thunderstorm and heavy rains. In the common yard outside my apartmentcomplex there are these big appletrees. Anyone can pick the apples but I never see anyone but me do it. However most are so high up I cannot reach them. But due to the weather apples fell to the ground last night. This morning I went out and picked them. I have now cooked all and I got 2 kg of free Apple Sauce! I will freeze the jars and it will last me a year.
