Roast Beef Sandwich with Rootveggies

Sometimes it is great to be able to put together a meal that doesn’t take too much time. What is better than a sandwich. So tonight I made Roast Beef Sandwich. I had sliced roast beef in my freezer and could take out a few pieces. What else; A couple slices of toast, some chopped onion and garlic, a couple leaves Bok Choy, a few slices Cheddar Cheese and a tsp mustard, butter and olive oil. As a side I made some carrot and potatoe fries in the airfryer.

To make this simple and amazing sandwich: Sweat the onion and garlic in a little oil and butter and set aside. Fry the Bok Choy in a little oil till tender. Fry the toast on both sides in butter and olive oil until golden. Melt the cheddar cheese and mix in the mustard.

For the fries just peel and cut the carrot and potatoe in small sticks. Spray or coat with some oil and sprinkle with some Rosmarin and stir. Place in the airfryer (or oven) at 180 celsius degrees for 10 minutes. Open and stir around. Fry for another 10 minutes or until golden. Sprinkle over some salt.

Assemble sandwich: Place the sallad leaf on one sandwich, top with onion and garlic mix. Top with roast beef slices. Spread melted cheese on top of the meat. Top with the second slice of toast. Cut in half/two triangels.
