Vegetarian Nacho Platter with Tofu

Cookalong with Frida and Ciana last Sunday night. They in Frisco, Dallas Texas, USA and me here in Sollentuna Sweden. We made a Vegetarian Nacho platter with Tofu, vegetables and Guacamole. It was amazing. We marinaded the Tofu and baked it in the oven. We made Nacho chips from Tortillas and fried in the airfryer. We chopped Bell pepper and some cabbage and Bok Choy and made Guacamole from Avacado. When the ingredients were prepared we assembled the platter, sprinkled with shredded cheese and put it in the oven for the cheese to melt. Such an easy and great meal.

Ingredients for the Tofu:

  • 450 g firm tofu
  • 3 tbsp soy sauce
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp chili powder
  • 2 tbsp nutritional yeast

Additional ingredients for the platter:

  • Shredded Cheese
  • Chopped greens of your choice (I had Bok Choy and bell peppers and Frida and Cianna had cabbage)

Guacomole:

  • Avacado
  • Lemonjuice
  • Salt
  • Peppar

For tortillachips

  • Soft Tortillas

Instructions:

Set the oven to 400 Fahrenheit / 200 Celsius Degrees

Press Tofu to remove water. I packed mine in a baking cloth and put my iron cast pan on top.

When the water has come out crumble Tofu in spice mix

Spread the crumble evenly in a baking tray

Bake for 20 minutes in the oven

Prepare the Guacomole:

Mash the avocado with a fork and add a pinch of salt and pepper and I little lemon juice, all according to your taste. To make the Guacomole more creamy you can add I little natural yoghurt.

Prepare Tortilla Chips:

We made our tortilla chips in the airfryer.

Cut your tortillas in triangles

In a small bowl, whisk together the oil and seasonings of choice

Brush a light coating of the oil mixture on both sides of the tortillas and toss them in the bowl with the olive oil, salt and pepper or a spice you prefare until all are coated.

Place them in your airfryer and fry for about five 7-9 minutes on 350 Fahrenheit/ 176 Celsius Degrees

Check after a few minutes and toss and turn. I checked often to avoid my chips become burnt.

Take out the chips when they are crunchy and a bit golden.

Plate:

When all ingredients are prepared plate your platter:

Start with arranging the chips on a oven safe tray

Top with the tofu mix, add your cheese and greens

Place in the oven and bake until the cheese has melted.
