Soy Glazed Cod fillets with Bok Choy

If you follow my instagram or visit my website you will find I love the challenge of ”difficult dishes” from around the world, dishes that take time to both prepare for and make. However during busy days ”Under thirty minute meals” are great. And I have a lot of recipes and ideas for those as well.

However I want meals that are still healthy as quick alternatives.

Here is my tip of the day. It is delicious and took just a few minutes to make (about 15 to be exact).

Main ingredients:

  • Cod fillets
  • Greens: onion, garlic, scallions, ginger, Bok Choy, red Chile, Bell peppar.

Glaze:

  • 2 tbsp honey, 2 tbsp soy sauce, 1 tbsp balsamic vinegar, 1 tbsp olive oil, salt pepper.

Instructions:

I made the glaze by mixing honey, soy sauce and vinegar and warming for 90 seconds in the microwave. Salt and peppar the Cod lightly and spoon glaze over ( about half of the glaze). Place in the airfryer at 120 degrees celsius for 10 minutes than five more at 160 Celsius degrees. Meanwhile cut the onion, garlic, scallion, ginger, Chile and Bell pepper and wok for a minute in olive oil. Cut Bok Choy in half and place in the frying pan and wok on both sides for a couple minutes until a bit tender.

Plate and spread the rest of the glaze over the Cod.

The Cod can be fried in the oven or a pan if you do not have an airfryer.

My Cod turned out wonderfully flaky.
