Olive Oil Cake

Since I started my new website Bj´s Live Kitchen I also started an Instagram account @bjslivekitchen. Look me up if you will. I also enjoy following other instagram foodaccounts. There are so many wonderful creations from all parts of the world. So I love to just watch and get inspired. There are so  many dishes I want to make.

Last night I baked an Italien Olive Oil Cake from a recipe on the instagramaccount of  historicalitalianfood, Karima Moyer-Nocchiof @historicalitalianfood

I really love it! I never baked like this with olive oil before. And it was my first time to taste Olive Oil Cake. It was so easy to make and tastes so great! Check out the recipe!

OLIVE OIL CAKE

  • 250 ml Extra Virgin Olive Oil
  • 150 g brown sugar
  • 3 eggs
  • 200 ml milk
  • 400 g self-rising cake flour (I didn´t have that so I used ordinary wheatflour and added 1 ½ tsp baking powder and ½ tsp salt)
  • ½ tsp ground allspice
  • 2 tsp cinnamon
  • ½ tsp nutmeg
  • 100 g toasted unsalted pistachios
  • 150 g toasted walnuts
  • 4 tbsp chopped orange peel

Instructions:

Butter and flour a large tube pan. Preheat oven to 180°C.

Cream the olive oil, sugar, and eggs together for 3-5 minutes in a large bowl until light and creamy. Mix the dry ingredients and fold half of that in with the creamed bit, then half the milk, and repeat. Fold in the nuts and orange. Bake for 50 min. Enjoy!
